If you’re following me on Instagram, you’ve probably noticed that once January hit, I got back on track with my health, fitness and wellness routines for 2019. I started working out again (5 times a week, basically Monday through Friday), as well as cooking all meals at home (breakfast, lunch, and dinner) and keeping up with my skincare and wellness routines.

When it comes to cooking at home, I want three things: FAST, FRESH and CONVENIENT! Enter… Farm Fresh to You.

Today I wanted to share some of my favorite meals to cook at home that are actually super easy to make! To be honest, I’ve been so incredibly busy lately developing my TV series, I haven’t had time to cook up some elaborate gourmet “Craig Cook” meals like my Dad. (Luckily, we still get to enjoy them because they have us over all the time! hehe)

I’ve been a fan of Farm Fresh to You for years and I continue to work with them again and again because I absolutely love their service. They partner with local farmers and artisans to deliver a customized box of organic goodness to your door! Each box comes with a list of your items and some recommended recipes!

My favorite aspect of the service is customizing my box! After selecting an organic produce box, you have the option to swap items, by adding ones you want and removing ones you don’t. You can even add items to a “Never Send List” or set up recurring ones. I absolutely love that I have the ability to add artisan farm products like fresh eggs, juice, jam, coffee, sesame seeds and more!

You also have the flexibility to change your box type and size as well as the frequency of your delivery. CUSTOM everything!

The first recipe I’m sharing is my go-to breakfast: Kale Egg-White Omelet. It’s fresh, light and fills me up without making me too full to work out. The perfect combo to start your day!



  1. Chop 1-2 pieces of kale (stem removed) and half of 1 shallot. Set aside.
  2. Chop some fresh cilantro and slice up 1/3 avocado for garnish. Set aside.
  3. Spray your cooking pan with PAM or a light cooking spray.
  4. Crack 5-6 eggs and add (only egg-whites) to your pan.
  5. Add kale and shallots to one side of the eggs.
  6. On the same side, add 1-2 slices pepper jack cheese.
  7. Top with lid and cook on low.
  8. After a few moments, use a spatula to carefully flip the (empty) side of the egg onto the side with all your goodies.
  9. Transport to a plate and top with fresh cilantro and avocado. (Optional: Sprinkle with turmeric, cayenne, and garlic-herb sensation seasoning).
  10. Pair with a glass of fresh lemon water and enjoy!

It’s only been a month since I started this routine, but I can already notice a HUGE difference in almost every aspect of my day. Here are some positive changes I’ve experienced since I got back into working out and eating healthy with Farm Fresh to You:

  1. I wake up feeling GREAT.
    I don’t know why but for the past six months or so, getting out of bed has been a MISSION. My body just doesn’t want to leave the bed! Chris has had to literally drag me out because I just haven’t felt motivated to get up at a decent hour. All of that has changed. Now, I wake up feeling refreshed and motivated to start my day with a healthy breakfast and sometimes, I feel so ambitious, I even manage to squeeze in my workout before lunch!     I wouldn’t consider myself a lazy person… however, I notice on the days I’m super busy (which lately feels like every day!), I’m less motivated to cook because I’m too overwhelmed with everything on my To-Do list and it just seems easier to grab fast food then it does to create a mess for myself in the kitchen. It’s also been strangely rainy here in California which is just weird for us, making it even more of a challenge to find the energy to stop what I’m doing and brave the rain to run to the grocery store. I was super excited to find items I need for my Asian-Chicken Teriyaki Salad like Organic Sesame Seeds and my favorite brand of Organic Rice Vinegar.   3. I’m MOTIVATED to workout.
    Eating right and working out definitely go hand-in-hand. I notice I’m more likely to stick to both when I do them at the same time instead of one or the other. When I eat right, I’m much more motivated to stick to my workout routine. I’ve also started using the Samsung Health app which is a great (and fun) tool to track your fitness routines as well as your food intake. I love adding my Farm Fresh ingredients and seeing my personal progress from the combination of eating well and working out. I’m actually back down to my ideal weight and it’s only been a month! Real results, People!!
  4. My SKIN is glowing and blemish-free!
    Most of you know I’ve suffered with acne for pretty much my entire life.     I mentioned this earlier, but even though I work form my home, between my day job and writing my TV series I’ve been the busiest I’ve ever been! I also added Carmody Cheese (to pair with some wine for a little after-dinner treat) and some Chocolate Truffle Pop-Ems to have in my morning coffee. SO MUCH YUM!! Chris and I go through a TON of coffee and although we normally drink it black, I love mixing things up once in a while and these little Truffle Pop-Ems are AMAZING! I’m seriously hooked!
