‘Messing Around’ in the kitchen with Colman’s AGAIN!

Since my first time cooking with Colman’s was so much fun and the recipes came out SO delicious, today I decided to mess around in the kitchen AGAIN! I had a little Hot Basmati Rice left over and decided to make some easy grilled asparagus and baked tilapia to go with it for lunch. It might sound strange but mustard and fish go together really well!

HOT & Healthy Tilapia

Pre-heat oven to 425°

Sprinkle asparagus with salt + pepper.

Cook for 10-12 minutes.

Sprinkle tilapia with Colman’s Dry Mustard Powder & Spicy Garlic Rub.

Cook for 15-18 minutes.

Serve HOT & Heathy Tilapia over HOT Basmati Rice & grilled asparagus.

I guess it’s safe to say I’m hooked on Colman’s! For this collaboration we were asked to make two recipes but after dinner last night and lunch today, I wanted to use it AGAIN in my dinner tonight! I have an easy chicken marinate I love to make at home and decided to add Colman’s Mustard Prepared to make it HOT!

(HOT) Lemon Chicken Marinate

This recipe is super easy! First place boneless skinless chicken tenders in a large baggie. Combine all the ingredients below by whisking them together in a measuring cup and slowly pour over the chicken in your baggie. Make sure baggie is securely closed and slosh around until entire contents are covered in the marinate. Let sit anywhere between 1 hour and 24 hours. (The longer it marinates the more flavor will soak into your chicken so I like to make my marinate in the morning and then it’s perfect by dinner time!)

Prep work:

  • Zest 1 lemon
  • Mince 1 large garlic clove
  • Finely chop fresh cilantro + parsley

Ingredients:

  • 2 tbsp. olive oil
  • 1/4 cup lemon juice (fresh if possible)
  • 1/4 tsp. thyme
  • 1/2 tsp. lemon pepper
  • 1 tbsp. honey mustard
  • 1 tbsp. Colman’s Mustard Prepared
  • 1/4 tsp. sea salt
  • 1/4 tsp. red pepper flakes
  • Minced garlic
  • Chopped parsley + cilantro

In a large pan, cook chicken in olive oil on medium-low heat (lid on) for about 10 minutes. (Flip chicken 5 minutes in to make sure both sides cook evenly).

Cook Asparagus in the oven at 425° for 10 minutes. Just add salt + pepper.
