Pad Thai is a favorite for Chris and I. There’s a local place by our house that we LOVE and I’ve wanted to try making it at home for so long but thought it would be super hard and was a little intimidated. I did some searching on Pinterest and found a recipe that seemed simple enough and just tweaked it a little bit. Trust me… if I can do it, so can you. It’s actually pretty easy and it is SO SO good! We like our food spicy so be ready for some kick!
1 Box brown rice noodles – 8oz
1 garlic clove – minced
Crushed red pepper flakes – 1 tbsp
1 green onion
1 red bell pepper
Peanuts – about 1 tbsp, finely chopped
Thai Sweet Chili Sauce – 4 tbsp
Sriracha Chili Garlic Sauce *(HOT if you like the extra kick!) – 4 tbsp
Sesame Oil – 4 tbsp
Fish Sauce – 4 tbsp
PB 2 – 8 tbsp
1 lime (or 1 tbsp lime juice)
*(I personally despise bean sprouts but they are pretty common in Pad Thai dishes so if you dig them, feel free to add some in!)
1. First make the sauce! In a medium bowl, mix ingredients together, set aside.
2. Next mince the garlic and chop your peanuts and all veggies any way you like and set aside.3. Season shrimp with cumin and cook on medium. Once cooked on both sides, add in veggies for a quick grill. *(I also made this recipe with chicken scallopini and it was delicious also!)
4. Noodles: Bring 4-5 quarts water to a boil. Add noodles and boil 4-5 minutes or until tender, stirring occasionally. Drain & rinse under cold water.5. Add sauce, shrimp, veggies and stir together till noodles are fully coated in the delicious sauce! Top with chopped green onions, fresh cilantro and chopped peanuts as desired.
